hope this fix your issue preg_replace does replace all occurrences, so you should stick with that. Indeed, a look behind cannot have a * in it, so that wont work. But you can use a capture group for the part you want to keep, and inject it again with $1:
$pattern = "/(<td>[^\x0B]*<\/td>)<td>\x0B<\/td>/";
$result = preg_replace($pattern, "$1", $testInput);
echo $result;

Any of those help I'd be keeping your HTML as HTML, keep it out of the JavaScript. If you change from a table to ul you now have to go rewrite your javascript.
Set a hidden template. Make a copy of the template to work with and remove the template all together. Then you can clone the template an replace values as needed without needing to worry about your HTML structure.
