Does that help You need to do something with the result when you replace, something similar the following should fix it.
public static string[] ChangeAddress(string[] address)
    for (int i = 0; i < address.Length; i++)
        address[i] = Regex.Replace(address[i], @"(\s-|[^A-Za-z])", "");
    return address;

This might help you Assuming all placeholder start with @ and contain only digits, you can use the Regex.Replace overload that accepts a MatchEvaluator delegate to pick the replacement value from a dictionary:
var regex = new Regex(@"@\d+");

var dict = new Dictionary<string, string>

var input = "@1 is having lunch with @10 @11";
var result=regex.Replace(input, m => dict[m.Value]);
