This might help you Checkboxes (input elements in general) don't have content (they're void elements), so innerText and textContent and innerHTML don't have any function in relation to them.
If you want text next to your checkbox, the usual thing is to wrap a label around it. In markup, that would be:
<label>
    <input type="checkbox">
    Text
</label>
// ...
let td = document.createElement('td')
let div = document.createElement('div')
let label = document.createElement('label')  // *** (added)
label.innerText = 'Tag'                      // *** (moved and modified)
let cb = document.createElement('input')
div.className = 'checkContainer'
cb.id = 'checkTd'
cb.type = 'checkbox'
label.insertBefore(cb, label.firstChild);    // *** (added)
div.appendChild(label)                       // *** (modified)
// ...
// ...
let tr = document.createElement('tr')
tr.innerHTML = `
    <td>
        <div class="checkContainer">
            <label>
                <input type="checkbox" id="checkTd">
                Tag
            </label>
        </div>
    </td>`;
tbdy.appendChild(tr)
// ...

Why does a transition occur when showing an element after setting a property while the element is hidden?

it fixes the issue This really is a bizarre problem. I don't think you're doing anything wrong in your codeā€”the current browser implementations are just buggy.
I've run into these kind of seemingly-obvious bugs before with CSS transitions, and they're a huge pain to deal with without resorting to byzantine hacks that are sure to break once the bug they're working around is fixed (in this case, my WebKit fix).
upper.style.removeProperty('transition');
upper.style.removeProperty('-o-transition');
upper.style.removeProperty('-moz-transition');
upper.style.removeProperty('-webkit-transition');
upper.style.removeProperty('height');
// force a reflow
// if (upper.offsetParent) { /* empty */ }
upper.style['transition'] = 'height 1000ms';
upper.style['-o-transition'] = 'height 1000ms';
upper.style['-moz-transition'] = 'height 1000ms';
upper.style['-webkit-transition'] = 'height 1000ms';
#upper {
    background-color: red;
}
window.setTimeout(function() {
    upper.style.removeProperty('transition-property');
    upper.style.removeProperty('-o-transition-property');
    upper.style.removeProperty('-moz-transition-property');
    upper.style.removeProperty('-webkit-transition-property');
    upper.style.removeProperty('opacity');
    lower.style.removeProperty('opacity');
}, 1);

Is there a way to get innerText of only the top element (and ignore the child element's innerText)?

may help you . Is there a way to get innerText of only the top element (and ignore the child element's innerText) ? , Just iterate over the child nodes and concatenate text nodes:
var el = document.getElementById("your_element_id"),
    child = el.firstChild,
    texts = [];

while (child) {
    if (child.nodeType == 3) {
        texts.push(child.data);
    }
    child = child.nextSibling;
}

var text = texts.join("");

fixed the issue. Will look into that further I am using selenium in python. I have come across this table webelement. I need to check if a string is present in the webelement and return a corresponding string in case its present. , It can be achieved by finding the element using the following Xpath:
//td[contains(., 'A730FXXU2ARC9/A730FOJM2ARC1/A730FXXU2ARC9')]/preceding-sibling::td[1]/a
driver.find_element(By.XPATH, '//td[contains(., 'A730FXXU2ARC9/A730FOJM2ARC1/A730FXXU2ARC9')]/preceding-sibling::td[1]/a').text

Why does the innerText property of the html element only show the innerText of the body element?

like below fixes the issue Your below code working as it's intended behavior. I think you get confused about them. Have a look here at MDN
Couple of them :
// remove new-line and white space with replace
console.log(document.getElementsByTagName('html')['0'].textContent.replace(/[\n\r]+|[\s]{2,}/g, ' '));
<!DOCTYPE html>
<html lang="en">
<head>
    <meta charset="UTF-8">
    <meta name="viewport" content="width=device-width, initial-scale=1.0">
    <meta http-equiv="X-UA-Compatible" content="ie=edge">
    <title>Document</title>
</head>
<body>

    <p>innnerHtml of paragraph</p>
</body>
</html>

Creating an element node, setting its attributes, and appending the element?

This might help you You have used same name for two variables. As they are are declared with var so it will not throw error. The second one will overwrite the first.
Just change the name of one of the variable
window.addEventListener("load", setStyles);

function setStyles() {
   var styleNum = randInt(5);
   var styleElm = document.createElement("link");
   styleElm.setAttribute("rel", "stylesheet");
   styleElm.setAttribute("id", "fancySheet");
   styleElm.setAttribute("href", "na_style_" + styleNum + ".css");
   document.head.appendChild(styleElm);
}
