like below fixes the issue There are several parts to your question. Let's address them one by one:
1: Change labels. This can be done by varying the 3rd argument for panel.text():
myPanel <- function(x, y, z, ...) {
  panel.levelplot(x, y, z, ...)
  panel.text(x, y, round(pv.df$p.value, 2))
}
color.ramp.length <- 20
negative.length <- round(abs(range(pv.df$fold.change)[1]) /
                           diff(range(pv.df$fold.change)) *
                           color.ramp.length)
positive.length <- color.ramp.length - negative.length
cols <- c(colorRampPalette(c("seagreen", "white"))(negative.length),
          colorRampPalette(c("white", "firebrick"))(positive.length))
levelplot(fold.change ~ comparison*compound,
          pv.df,
          panel = myPanel,
          col.regions = cols,
          colorkey = list(col = cols,
                          at = do.breaks(range(pv.df$fold.change),
                                         color.ramp.length)),
          xlab = "", ylab = "",              # remove axis titles
          scales = list(x = list(rot = 45),  # change rotation for x-axis text
                        cex = 0.8),          # change font size for x- & y-axis text
          main = list(label = "Total FAME abundance - TREATMENT",
                      cex = 1.5)) # change font size for plot title

wish of those help I am trying to make gradiend colour between : , I think it should be a kind of:
for (int i = 255; i > 0; i--) {
    float h;
    float s;
    float v;
    if (i > 230) {
        h = 0;      // gray
        s = 0;
        v = 1f * i / 255;
    } else if (i <= 230 && i > 180) {
        h = 0.1;   // brown
        s = 0.8;
        v = 1f * (230 - i) / (230 - 180);
    } else if (i <= 180 && i > 79) {
        h = 0.33;  // green
        s = 1f;
        v = 1f * (180 - i) / (180 - 79);
    } else {
        h = 0.62;  // blue
        s = 1f;
        v = 1f;
    }
    g2.setColor(new Color(Color.HSBtoRGB(h, s, v)));
    g2.drawLine(0, 255 - i, 500, 255 - i);
}

Make color palette of discretized values for a continuous variable (lattice levelplot)

will help you You didn't specifiy the breakpoints to use for the regions (as you did for the colorkey), hence the mishmash in the color.
If you want the regions to be <=0.01, >0.01 & <=0.05 and >0.05 you need to specify it inside the levelplot call with the at parameter (and of course the same for the colorkey).
levelplot(p.value ~ comparison*compound,
          pv.df,
          panel = myPanel,
          col.regions = c("darkred", "red", "white"),
          at=c(0, 0.01, 0.05, 0.20),
          colorkey = list(col = c("darkred", "red", "white"),
                          at = c(0, 0.01, 0.05, 0.20)),
          xlab = "", ylab = "",              # remove axis titles
          scales = list(x = list(rot = 45),  # change rotation for x-axis text
                        cex = 0.8),          # change font size for x- & y-axis text
          main = list(label = "Total FAME abundance - TREATMENT",
                      cex = 1.5))

Does that help I have a Visual Studio form that i need to change the background color from white/green flashing after 10 loops to white/red flashing.
public int count = 0;

private void Timer1_Tick(object sender, EventArgs e)
{
     this.count++;

     if(this.count == 10)
     {
             if (this.BackColor == Color.Red)
             {
                    this.BackColor = Color.White;
             }
             else
             {
                    this.BackColor = Color.Red;
             }
     }
     else {
           if (this.BackColor == Color.LightGreen)
           {
                 this.BackColor = Color.White;
           }
           else
           {
                 this.BackColor = Color.LightGreen;
           }
           this.count = 0;
     }

}
