Any of those help Change the part of the dataset that you receive from the ajax response, then call the chart's update() function. This is done with the 2 additional lines at the end of the $.ajax success function.

will be helpful for those in need I finally figured it out. It was much easier then I thought and I have no idea why I didn't figure this out sooner..
Simply create seperate arrays within the first $.each loop and set the values..
var trendDataset = [];

$.each(trends.keywords, function(index, keyword) {
  // Create an Array for each data object
  trendData = [];
  trendLabels = [];
    $.each(keyword.data, function(index, data) {
      trendLabels[index] = data.month,
      trendData[index] = data.popularity
  // Push the array with data to another array

should help you out If you're removing using data.datasets.pop(ds1) you'll never get the result you're looking for. The dataset property is an array, so let's just focus on arrays and ignore Chart.js.
First issue is that the pop() method of the Arrays type does not take an argument, so providing which element you want to remove is irrelevant. Pop() will always remove the last element from an array.
let removalIndex = data.datasets.indexOf(ds1); //Locate index of ds1
if(removalIndex >= 0) { //make sure this element exists in the array
    data.datasets.splice(removalIndex, 1);

I wish did fix the issue. You can define array where colors are values and good, bad and normal are keys, see next:

chartColors['good'] = 'green';
chartColors['bad'] = 'red';
chartColors['normal'] = 'yellow';
