Hope that helps You get a NullPointerException because the tracker is initialized in the onStart method of the base class TrackedActivity, which happens after onCreate. However, TrackedActivity automatically tracks the creation of the activity (trackPageView) so normally you do not need trackEvent here. You can successfully call trackEvent on any other method between onStart and onStop on the activity's lifecycle.
To fix this issue The answer was found in this thread. With my limited knowledge of Google Analytics, I didn't know to look for the __utm.gif request in my Network panel. Sure enough, it wasn't being requested either. The site I'm working on is currently being hosted on an extranet. While it wasn't a localhost or intranet site, it seems like this is an issue with extranet sites as well.
